Dragon fruit is perishable in nature and available only season. Value added product from dragon will be throughout the year Product recipe needed to developed for maintaining quality acceptability consumers. The present experiment was carried out during 2022 Post Harvest Laboratory of Department Horticulture, SHUATS, Prayagraj. conducted Completely Randomized Design with 9 treatment replicated thrice. treatments were T0 (Control),T1 (Strawberry Juice (20% Total Fruit content)),T2 (30% Of content )),T3(Strawberry (50% content)),T4 (Aloe Vera Gel (5% content)),T5 (10% content)),T6 (15% content)),T7 (Kiwi Juice)),T8 Juice)),T9 Juice)). On basis our experimental finding it found that T3 : Strawberry content) best terms taste, shelf life , TSS, Ascorbic acid, Acidity organoleptic parameters.
